Ingredients

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/2 cup extra-virgin olive oil

1 teaspoon Dijon mustard

1 clove garlic, minced

1 tablespoon honey or maple syrup (optional for sweetness)

Salt and black pepper to taste

1 teaspoon fresh herbs (like basil, parsley, or thyme, finely chopped; optional)

Instructions

In a small bowl, whisk together the freshly squeezed lemon juice, Dijon mustard, minced garlic, and honey or maple syrup (if using) until well combined.

Slowly drizzle in the olive oil while continuing to whisk. This helps to emulsify the dressing, making it silky and smooth.

Season the vinaigrette with salt and black pepper to taste. If you're using fresh herbs, fold them into the dressing.

Taste and adjust the acidity or sweetness by adding more lemon juice or honey/maple syrup as needed.

Transfer the dressing to a jar with a tight-fitting lid, or use immediately over your favorite salad or grilled vegetables.

Prep Time: 10 minutes | Total Time: 10 minutes | Servings: Makes about 1 cup
