Lemon Garlic Shrimp Pasta With Spinach

8 oz fettuccine or spaghetti

1 lb large shrimp, peeled and deveined

3 cups fresh baby spinach

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant (do not let it burn).

      Add the Shrimp: Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque.

        Add Spinach: Stir in the fresh baby spinach and cook for another 1-2 minutes, until wilted.

          Combine Ingredients: Add the cooked pasta to the skillet with the shrimp and spinach. Pour in the lemon juice and zest. Toss everything gently, adding reserved pasta water a little at a time as needed to create a light sauce.
