Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 1 lemon

1/4 cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1/2 cup buttermilk

1 1/2 cups fresh blueberries (or frozen, if unavailable)

1 tablespoon all-purpose flour (for coating blueberries)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Dry Ingredients: In a medium bowl, whisk together the 1 1/2 cups of flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Flavorings: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the lemon zest, lemon juice, and vanilla extract until combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry mixture, mixing just until combined. Do not overmix.

Prepare Blueberries: In a small bowl, toss the blueberries with the 1 tablespoon of flour to coat them. This helps prevent them from sinking in the batter.

Fold in Blueberries: Gently fold the blueberries into the batter using a spatula, being careful not to break them.

Pour Batter: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serve: Slice the bread once it has cooled fully. Enjoy it plain, or with a spread of cream cheese or butter.
