Ingredients
  

8 oz whole grain or gluten-free pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 small red onion, finely chopped

1 cup fresh basil leaves, roughly chopped

1/4 cup extra virgin olive oil

3 tbsp freshly squeezed lemon juice

1 tsp lemon zest

1 tsp garlic powder

Salt and pepper to taste

1/4 cup nutritional yeast (optional, for a cheesy flavor)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, and red onion into small, bite-sized pieces. Place them in a large mixing bowl.
