Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (preferably panko)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon grated ginger

1 tablespoon gochujang (Korean chili paste)

1 egg, beaten

Salt and pepper to taste

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

    Mix the Meatball Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, soy sauce, brown sugar, sesame oil, ginger, gochujang, and beaten egg. Season with salt and pepper. Mix until fully combined, but don't overwork the meat.

      Form the Meatballs: Using your hands, shape the mixture into meatballs about 1-1.5 inches in diameter. Place each meatball on the prepared baking sheet, ensuring they are spaced apart to allow for even cooking.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are browned and cooked through. An instant-read thermometer should read 160°F (71°C).

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, whisk together the mayonnaise, gochujang, lemon juice, garlic powder, and a pinch of salt until smooth and well combined.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Garnish with sesame seeds and extra chopped green onions if desired. Serve warm with the spicy mayo dip on the side.
