2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

½ cup unsalted butter, melted and cooled

1 cup unsweetened applesauce

1 teaspoon vanilla extract

1 ½ cups peeled and diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

½ teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.

    In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk together until well combined.

      In a separate medium bowl, beat the eggs and add the melted butter, applesauce, and vanilla extract. Mix until smooth.

        Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix.

          Gently fold in the diced apples and nuts (if using), ensuring they are evenly distributed throughout the batter.

            Divide the muffin batter evenly among the prepared muffin cups, filling each about ¾ full.

              In a small bowl, mix together the brown sugar and remaining ground cinnamon. Sprinkle this topping over each muffin.

                Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Remove from the oven and let the muffins cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
