1/4 cup pure maple syrup or honey

2 large eggs, lightly beaten

2 tablespoons coconut oil, melted

2 large apples, peeled, cored, and diced (use a mix of tart and sweet apples)

1/2 cup raisins or dried cranberries (optional)

1/2 cup chopped nuts (e.g., walnuts or pecans) for added crunch (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir thoroughly to ensure the baking powder is well distributed.
