2 cups all-purpose flour

1 cup apple cider

3/4 cup granulated sugar

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1 cup powdered sugar (for coating)

Extra ground cinnamon and sugar (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or softened butter.

    In a medium saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and let it simmer until it reduces to about 1/2 cup (this should take around 10-15 minutes). Set aside to cool slightly.

      In a large mixing bowl, whisk together the flour, granulated sugar, cinnamon, nutmeg, baking powder, baking soda, and salt until well combined.

        In another bowl, whisk together the melted butter, eggs, vanilla extract, and reduced apple cider until smooth.

          Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overmix.

            Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

              Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Remove the donuts from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack.

                While the donuts are still warm, mix together the powdered sugar and an extra tablespoon of cinnamon and sugar in a shallow dish.

                  Toss each donut in the sugar mixture until fully coated. For an extra sweet touch, you can dip each side again after they’ve cooled slightly for a thicker coating.
