2 boneless, skinless chicken breasts

1/4 cup honey

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

1 cup cooked jasmine rice

1 ripe avocado, diced

1/4 cup chopped fresh cilantro

1/2 cup cherry tomatoes, halved

1 tablespoon olive oil

Juice of 1 lime

1/4 teaspoon chili powder (optional)

Lime wedges for serving

Marinate the Chicken: In a bowl, combine honey, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add chicken breasts and coat well. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours for more flavor.
