Ingredients

1.5 lbs chicken thighs (boneless, skinless)

1 cup all-purpose flour

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 cup buttermilk

1/4 cup honey

1/2 cup unsalted butter (melted)

1 teaspoon cayenne pepper (optional for extra heat)

Fresh parsley (for garnish)

Instructions

Prepare the Chicken: Start by cutting the chicken thighs into bite-sized pieces. In a bowl, mix the buttermilk, honey, and cayenne pepper (if using) to create a marinade. Add the chicken pieces to the mixture, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

Make the Coating: In a separate large bowl, combine the flour, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well to incorporate all spices evenly.

Coat the Chicken: After marinating, remove the chicken from the refrigerator. Beat the eggs in another bowl. Dip each piece of chicken into the egg mixture, then dredge it in the seasoned flour, shaking off any excess.

Fry the Chicken: Heat a large skillet over medium-high heat and add enough vegetable oil to cover the bottom. Once hot (about 350°F), carefully lay the breaded chicken pieces in the skillet, making sure not to overcrowd the pan. Fry for about 5-7 minutes on each side or until golden brown and fully cooked.

Prepare Honey Butter: In a small saucepan over low heat, mix the melted butter and remaining honey until well combined. Allow it to warm without boiling.

Coat the Chicken with Honey Butter: Once all chicken is cooked, remove it from the skillet and drain on paper towels. Drizzle the warm honey butter over the chicken pieces until well coated.

Serve: Garnish with freshly chopped parsley for an added touch of color and flavor. Serve the honey butter chicken hot with your favorite sides!
