Hearty Irish Chicken Dhansak Curry

500g boneless chicken thighs, cut into chunks

2 cups of diced potatoes

1 cup of diced carrots

1 cup of chopped spinach

1 large onion, finely chopped

4 cloves of garlic, minced

1-inch piece of ginger, grated

2 tablespoons Dhansak curry powder

1 teaspoon turmeric powder

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 can (400 ml) coconut milk

2 cups chicken broth

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh coriander leaves for garnish

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken chunks with turmeric, cumin, coriander powders, and a pinch of salt. Allow it to marinate for at least 30 minutes.

    Cook the Base: Heat vegetable oil in a large pot over medium heat. Add the cumin seeds and let them splutter. Now, add the chopped onions and sauté until they turn golden brown.

      Add Aromatics: Stir in the minced garlic and ginger, cooking for another minute until fragrant.

        Spice It Up: Add the Dhansak curry powder to the pot and cook for 2 minutes, stirring continuously to enhance its flavor.

          Combine Chicken and Veggies: Add the marinated chicken to the pot along with the diced potatoes and carrots. Stir well to coat everything in the spice mix.

            Pour the Liquids: Add the coconut milk and chicken broth to the pot. Bring the mixture to a boil, then lower the heat, cover, and let it simmer for about 30 minutes, or until the chicken is tender and cooked through.

              Add Greens: Stir in the chopped spinach and cook for an additional 5 minutes until the spinach wilts. Adjust seasoning with salt and pepper to taste.
