Ingredients

2 medium zucchinis, spiralized or sliced thinly

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (preferably no salt added)

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional, for serving)

Fresh basil leaves for garnish

Instructions

Prepare the Zucchini: If you haven't already, spiralize or thinly slice the zucchinis. Set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

Add Tomatoes & Spices: Pour in the can of diced tomatoes, along with dried basil, oregano, red pepper flakes (if using), salt, and pepper. Stir to combine.

Simmer the Sauce: Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 10 minutes, allowing the flavors to meld.

Cook the Zucchini: Add the spiralized zucchini to the skillet. Toss gently to coat with the sauce and cook for an additional 3-5 minutes until the zucchini is tender but still slightly crisp.

Serve: Spoon the tomato zucchini pasta onto plates. If desired, sprinkle with grated Parmesan cheese and garnish with fresh basil leaves. Enjoy your healthy meal!
