Healthy Homemade Granola

This homemade recipe combines rolled oats, a variety of nuts, pumpkin and sunflower seeds, and unsweetened coconut flakes for a nutritious breakfast or snack. Sweetened with honey or maple syrup and flavored with cinnamon, it's packed with healthy ingredients. Easy to make and perfect for meal prep, this granola is delightful on its own or with yogurt. 3 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans, chopped)

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup unsweetened coconut flakes

1/2 cup honey or maple syrup (for a vegan option)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup dried fruits (raisins, cranberries, or apricots, chopped)

Instructions
 

Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

    In a large mixing bowl, combine the rolled oats, mixed nuts, pumpkin seeds, sunflower seeds, coconut flakes, cinnamon, and salt. Mix well.

      In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.

        Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

          Spread the granola mixture evenly onto the prepared baking sheet.

            Bake in the preheated oven for 20 to 25 minutes, stirring halfway through to promote even browning.

              Keep an eye on it to prevent burning; the granola should be golden brown when done.

                Remove from the oven and allow it to cool completely. It will crisp up as it cools.

                  Once cooled, mix in the dried fruits, breaking up any large clusters if desired.

                    Store in an airtight container for up to two weeks.
