1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the filling:

1 can (20 oz) crushed pineapple in juice, drained

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped topping

For the topping:

1 cup whipped topping

½ cup sliced strawberries

½ cup sliced bananas

½ cup maraschino cherries

Toasted coconut flakes (for garnish)

Prepare the crust: In a mixing bowl, combine graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Bake at 350°F (175°C) for 8-10 minutes, or until lightly golden. Allow to cool completely.

    Make the filling: In a medium bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until well incorporated. Fold in the drained crushed pineapple and whipped topping until well combined.
