1 lb ground turkey

2 tablespoons vegetable oil

2 cups broccoli florets

1 red bell pepper, thinly sliced

1 cup snap peas, ends trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, sliced for garnish

Sesame seeds, for garnish

Cooked rice or noodles, for serving

Instructions
 

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

    Once the turkey is cooked through, drain any excess fat from the skillet. Add minced garlic and ginger, stirring for about 1 minute until fragrant.

      Add the broccoli, red bell pepper, and snap peas to the skillet. Stir-fry the vegetables with the turkey for 4-5 minutes until they are tender-crisp.

        In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Pour this sauce over the turkey and vegetables, stirring to coat everything evenly.

          For a thicker sauce, stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce has thickened.

            Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sliced green onions and sesame seeds.
