1 lb ground turkey

2 medium sweet potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach (fresh or frozen)

1 tsp smoked paprika

1 tsp cumin

½ tsp black pepper

½ tsp salt (adjust to taste)

2 tbsp olive oil

¼ cup chicken broth (or vegetable broth)

Fresh parsley or cilantro for garnish (optional)

Prepare the Sweet Potatoes: Start by peeling and dicing the sweet potatoes into small cubes for even cooking. Set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until they become fragrant and translucent.

      Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet with the onion and garlic. Season with salt, pepper, smoked paprika, and cumin. Stir well and let them cook for about 10-12 minutes, stirring occasionally. You want the sweet potatoes to become tender and slightly caramelized.
