Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper, to taste

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or Monterey Jack)

1 tablespoon olive oil

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook for about 10-12 minutes until tender. Drain and set aside.

      Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Sauté the chopped onion for about 5 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

        Brown the Turkey: Increase heat to medium-high and add the ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spatula, about 5-7 minutes.

          Add Seasonings and Ingredients: Stir in the chili powder, cumin, paprika, salt, and pepper to taste. Then add the diced tomatoes, black beans, and corn, stirring everything together until well combined.

            Combine with Sweet Potatoes: Gently fold the cooked sweet potatoes into the turkey mixture until evenly distributed.

              Assemble the Casserole: Spread the turkey and sweet potato mixture into a greased casserole dish. Top with shredded cheese evenly over the top.
