1 lb ground turkey

2 large bell peppers (any color), diced

1 medium onion, diced

3 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup corn (fresh, frozen, or canned)

1/2 cup black beans, drained and rinsed (optional)

Juice of 1 lime

Fresh cilantro or parsley for garnish

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat until shimmering.

    Sauté the Veggies: Add the diced onion and bell peppers to the skillet. Sauté for about 5 minutes, or until they begin to soften.

      Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

        Cook the Turkey: Increase the heat to medium-high and add the ground turkey. Break it apart with a spatula and cook until browned and no longer pink, about 6-8 minutes.
