4 chicken thighs (bone-in, skinless)

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons lemon juice

4 garlic cloves, minced

1 tablespoon fresh ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground turmeric

1 teaspoon garam masala

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon salt

1 tablespoon fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Marinade: In a mixing bowl, combine the yogurt, vegetable oil, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, turmeric, garam masala, paprika, cayenne pepper, and salt. Whisk together until smooth.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F to 450°F).

        Prepare for Grilling: Remove the chicken from the marinade, shaking off any excess. Discard the leftover marinade.

          Grill the Chicken: Place the chicken thighs skin side down on the grill. Cook for 6-8 minutes until a good char forms. Flip over and continue grilling for another 6-8 minutes or until the internal temperature reaches 165°F.

            Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute within the meat.
