Grilled Skirt Steak with Lemon Herb Couscous Salad

Ingredients
  

1 lb skirt steak

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup couscous

1 ¾ cups vegetable or chicken broth

1 lemon (zested and juiced)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

¼ cup red onion, finely chopped

½ cup fresh parsley, chopped

¼ cup fresh mint, chopped

1 tablespoon honey (optional)

Instructions
 

Marinate the Skirt Steak: In a bowl, whisk together olive oil, minced garlic, smoked paprika, salt, and pepper. Coat the skirt steak in the marinade and let it sit for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Prepare the Couscous: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the couscous, remove from heat, cover, and let it sit for about 5 minutes. Fluff with a fork once ready.

      Make the Salad: In a large mixing bowl, combine the cooked couscous, lemon zest, lemon juice, cherry tomatoes, cucumber, red onion, parsley, and mint. Mix well and season with salt, pepper, and honey (if using) to taste. Set aside.

        Grill the Skirt Steak: Preheat the grill to medium-high heat. Remove the steak from the marinade and place it on the grill. Cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing against the grain.

          Serve: Slice the steak thinly and serve over a bed of the lemon herb couscous salad. Drizzle with olive oil or additional lemon juice if desired.
