Ingredients
  

1 cup chickpeas, drained and rinsed

1 ripe avocado

1/4 cup tahini

1 tablespoon apple cider vinegar

1 tablespoon fresh lemon juice

1 tablespoon Dijon mustard

1 garlic clove, minced

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup fresh parsley, chopped

1/4 cup fresh chives, chopped

1/4 cup cucumber, finely diced

1/4 cup bell pepper, finely diced

4 slices whole grain bread

Optional: Lettuce leaves for added crunch

Instructions
 

In a medium bowl, mash the chickpeas and avocado together using a fork until well combined but still chunky.

    Add tahini, apple cider vinegar, lemon juice, Dijon mustard, minced garlic, sea salt, and black pepper to the bowl. Mix until well blended.

      Fold in the chopped parsley, chives, diced cucumber, and diced bell pepper, mixing until all ingredients are incorporated.

        Toast the bread slices lightly until golden brown, if desired.

          Spread a generous amount of the Green Goddess salad mixture on two slices of bread. If using, place a layer of lettuce leaves on top for added crunch.

            Top with the remaining slices of bread to create your sandwich.

              Cut the sandwiches in half and serve immediately, or wrap them up for lunch on the go.
