Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 cloves garlic, minced

2 tablespoons olive oil, plus more for drizzling

Juice of 1 lemon

1 teaspoon ground cumin

Salt to taste

1/2 cup Greek yogurt

1/2 cup diced cucumber

1/2 cup diced tomato

1/4 cup Kalamata olives, pitted and roughly chopped

1/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

Pita bread or vegetable sticks for serving

Instructions

In a food processor, combine the chickpeas, tahini, minced garlic, olive oil, lemon juice, ground cumin, and salt. Blend until smooth, scraping down the sides as necessary.

Adjust the consistency of the hummus by adding a bit of water if it is too thick, blending until creamy and well mixed.

Transfer the hummus to a serving dish and smooth the top with the back of a spoon.

In a small bowl, mix the Greek yogurt with a pinch of salt and spread it over the hummus layer for a creamy base.

Top the hummus with diced cucumber, diced tomato, Kalamata olives, and crumbled feta cheese, evenly distributing them across the surface.

Sprinkle the chopped fresh parsley on top for a pop of color and freshness. Drizzle a little olive oil over the loaded hummus for added richness.

Serve with pita bread or vegetable sticks for dipping.
