For the Chicken Marinade:

500g chicken breast, boneless, cut into cubes

200g plain yogurt

2 tbsp lemon juice

2 tsp ground cumin

2 tsp ground coriander

1 tsp garam masala

1 tsp paprika

1 tsp turmeric

2 cloves garlic, minced

1-inch piece ginger, minced

Salt and pepper, to taste

For the Sauce:

1 tbsp vegetable oil

1 tbsp unsalted butter

1 onion, finely chopped

2 cloves garlic, minced

1-inch piece ginger, minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp garam masala

1 tsp turmeric

1 tsp paprika

400g canned tomatoes, crushed

150ml heavy cream

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Chicken:

    - In a large bowl, mix yogurt, lemon juice, ground spices, garlic, ginger, salt, and pepper.

      - Add chicken cubes and coat well. Cover and refrigerate for at least 1 hour (ideally overnight).

        Cook the Chicken:

          - Preheat the grill or oven to 200°C (400°F).

            - Thread the marinated chicken onto skewers and grill for 15-20 minutes, turning occasionally, until cooked through and slightly charred.

              Prepare the Sauce:

                - In a large pan, heat vegetable oil and butter over medium heat. Add chopped onions and sauté until soft and golden.

                  - Stir in minced garlic and ginger; cook for another minute.

                    - Add cumin, coriander, garam masala, turmeric, and paprika. Stir and toast the spices for about 30 seconds.

                      Build the Sauce:

                        - Add crushed tomatoes to the pan and simmer for 10 minutes. Reduce heat and stir in the heavy cream, simmering for another 5 minutes until thickened.

                          Combine Chicken and Sauce:

                            - Add the grilled chicken to the sauce, stirring to coat thoroughly. Simmer for 5 more minutes to meld flavors.

                              Serve:

                                - Garnish with fresh cilantro and serve hot alongside basmati rice or with warm naan.
