500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground turmeric

1 teaspoon garam masala

1 teaspoon chili powder (adjust to taste)

1 tablespoon vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1-inch piece of ginger, minced

1 can (400g) crushed tomatoes

150ml coconut milk or heavy cream

Salt to taste

Fresh coriander (cilantro), for garnish

Instructions
 

Marinate the Chicken: In a large bowl, mix the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, chili powder, and salt. Add the chicken pieces and coat evenly. Cover and marinate for at least 1 hour (or overnight for best results) in the refrigerator.

    Prepare the Sauce: In a large skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are soft and golden brown, about 8-10 minutes.

      Add Aromatics: Stir in the minced garlic and ginger and cook for an additional 2 minutes until fragrant.

        Incorporate Tomatoes: Pour in the crushed tomatoes, stirring to combine. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

          Cook the Chicken: Once the sauce is ready, add the marinated chicken along with all the marinade into the skillet. Stir well, cover, and let it cook for 15-20 minutes, or until the chicken is fully cooked through and tender.

            Finish the Dish: Lower the heat and stir in the coconut milk or heavy cream for a rich, creamy texture. Adjust salt to taste and let it simmer for an additional 5 minutes.

              Garnish and Serve: Remove from heat, garnish with freshly chopped coriander (cilantro). Serve hot with basmati rice or naan bread.
