Ingredients

12 oz fettuccine or spaghetti

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon (optional, for brightness)

Extra grated Parmesan for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside.

Sauté Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes until fragrant, but be careful not to let it brown.

Make the Sauce: Slowly pour in the heavy cream, stirring well to combine. Bring the mixture to a gentle simmer. Cook for about 2-3 minutes until it begins to thicken slightly.

Add Cheese: Lower the heat and stir in the grated Parmesan cheese, salt, and black pepper. Keep stirring until the cheese has fully melted and the sauce is creamy. If the sauce becomes too thick, slowly add some reserved pasta water until the desired consistency is reached.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing until the pasta is well coated with the garlic Parmesan sauce. If desired, add lemon zest for added brightness.

Serve: Plate the pasta and garnish with chopped fresh parsley and extra grated Parmesan cheese. Enjoy!
