250g (about 9 oz) mixed mushrooms (cremini, shiitake, and oyster), sliced

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper, to taste

4 slices of rustic sourdough bread

1 tablespoon balsamic vinegar

Freshly grated Parmesan cheese, for serving (optional)

Sauté the Mushrooms: In a large skillet, heat olive oil and butter over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are golden brown and have released their moisture.

    Add Garlic and Herbs: Stir in the minced garlic, fresh thyme, salt, and pepper. Cook for another 2-3 minutes until the garlic is fragrant but not burnt.

      Finish with Balsamic: Drizzle the balsamic vinegar over the mushroom mixture, stirring well to combine. Let it cook for an additional minute, then remove from heat and sprinkle with fresh parsley.
