Garlic Butter Steak Bites and Potatoes

Ingredients
  

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper, to taste

2 tablespoons olive oil

1 teaspoon paprika (optional, for extra flavor)

Instructions
 

Cook the Potatoes:

    In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside.

      Sear the Steak:

        In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the bite-sized steak pieces in a single layer (you may need to do this in batches). Season with salt, pepper, and paprika. Sear for about 2-3 minutes on each side for medium-rare. Remove the steak bites from the skillet and set them aside on a plate.

          Make Garlic Butter:
