1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes, cut side down, and season with salt and pepper. Cook for about 10-12 minutes, turning occasionally, until they are golden brown and tender. Remove from the skillet and set aside.

    Sear the Steak: In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high. Season the steak cubes with salt and pepper, then add them to the skillet in a single layer. Sear for about 3-4 minutes on each side until browned but not cooked through. Remove from the skillet and set aside.
