Ingredients

4 slices of sourdough bread

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Optional: crushed red pepper flakes for a kick

Instructions

Prepare Garlic Butter: In a small bowl, combine the softened butter, minced garlic, parsley, a pinch of salt, and pepper. Mix until well combined.

Assemble the Sandwich: Spread a generous layer of the garlic butter mixture evenly on one side of each slice of sourdough bread.

Layer the Cheese: On the non-buttered side of two slices of bread, layer the cheddar and mozzarella cheeses evenly. If desired, sprinkle some crushed red pepper flakes over the cheese for added heat.

Seal the Sandwich: Place the remaining two slices of bread on top, buttered side up, creating two sandwiches.

Grill: Heat a large skillet over medium heat. Carefully place the sandwiches in the skillet and cook for about 3-4 minutes on one side until golden brown and crispy.

Flip and Finish: Carefully flip the sandwiches over and lower the heat slightly. Cook for another 3-4 minutes, pressing down gently with a spatula to ensure the cheese melts and the bread crisps up.

Check for Doneness: The cheese should be melted and gooey, and the bread should be beautifully golden brown. Remove from the skillet and let cool for a minute.

Slice and Serve: Cut the sandwiches in half and serve warm. Enjoy your delicious Garlic Bread Grilled Cheese with a side of marinara sauce or your favorite dipping sauce!
