8 small soft corn tortillas

1 cup diced fresh pineapple

1 cup diced strawberries

1 cup diced kiwi

1 ripe banana, sliced

1 cup blueberries

1 tablespoon honey

1 lime, juiced

1 teaspoon cinnamon

1 cup Greek yogurt (or coconut yogurt for a dairy-free option)

ΒΌ cup shredded coconut (optional)

Fresh mint leaves, for garnish

Instructions
 

In a large mixing bowl, combine the diced pineapple, strawberries, kiwi, banana, and blueberries.

    Drizzle honey and lime juice over the fruit mixture and gently toss to combine. Sprinkle cinnamon on top, mixing well so the spices are distributed.

      Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable.

        To assemble the tacos, take a warmed tortilla and spoon a generous amount of the fruit mixture onto the center.

          Add a dollop of Greek yogurt on top of the fruit in each taco.

            If desired, sprinkle shredded coconut over the yogurt and finish with a few fresh mint leaves for a burst of flavor.
