Ingredients

4 ripe but firm bananas

1/2 cup all-purpose flour

1/4 cup cornstarch

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

Oil for frying (e.g., coconut or vegetable oil)

1/4 cup unsalted butter

1/4 cup brown sugar

1 teaspoon ground cinnamon

A pinch of salt

Instructions

Prepare the Bananas: Peel the bananas and slice them diagonally into 1/2-inch thick pieces. Set aside.

Make the Batter: In a mixing bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add the milk and vanilla extract, stirring until the mixture is smooth and has no lumps.

Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of oil over medium heat until hot (around 350°F or 175°C).

Fry the Bananas: Dip each banana slice into the batter, ensuring an even coating, then carefully place them in the hot oil. Fry in batches for about 2-3 minutes on each side or until they are golden brown.

Drain: Using a slotted spoon, transfer the fried bananas to a plate lined with paper towels to drain excess oil.

Make the Cinnamon Butter Sauce: In a small saucepan over medium heat, melt the butter. Stir in the brown sugar, ground cinnamon, and a pinch of salt until the mixture is smooth and slightly thickened, about 2-3 minutes.

Serve: Drizzle the hot cinnamon butter sauce over the fried bananas and enjoy immediately. Optionally, serve with a scoop of vanilla ice cream for extra indulgence.
