1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon nutmeg (optional)

4 large eggs

1 teaspoon vanilla extract

Vegetable oil, for frying

1 cup powdered sugar

2 tablespoons milk or water (for glaze)

Extra powdered sugar, for dusting (optional)

Prepare the Dough: In a medium saucepan, combine water and butter over medium heat. Stir until the butter is melted. Bring the mixture to a boil, then remove from heat.

    Incorporate Dry Ingredients: Add flour, salt, and nutmeg (if using) to the saucepan. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.

      Add Eggs: Let the dough cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until completely incorporated. The dough should be smooth and glossy. Stir in the vanilla extract.

        Pipe the Crullers: Transfer the dough to a piping bag fitted with a star tip. On a parchment-lined baking sheet, pipe dough in 4-inch long rings, connecting the ends to form a circle. Repeat until all the dough is piped.

          Heat Oil: In a deep frying pan, heat about 2 inches of vegetable oil to 375°F (190°C).
