Fall Harvest Salad

4 cups mixed greens (spinach, arugula, and kale)

1 medium apple, thinly sliced (honeycrisp or Granny Smith)

1 small pear, thinly sliced

1 cup roasted butternut squash, cubed

1/2 cup dried cranberries

1/2 cup walnuts, toasted

1/4 cup feta cheese, crumbled

1/4 red onion, thinly sliced

For the Maple Dressing:

3 tablespoons pure maple syrup

2 tablespoons apple cider vinegar

1/2 teaspoon Dijon mustard

1/4 cup olive oil

Salt and pepper to taste

Prepare the Roasted Butternut Squash: Preheat your oven to 400°F (200°C). Toss cubed butternut squash in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized. Let cool.

    Make the Maple Dressing: In a small bowl, whisk together maple syrup, apple cider vinegar, Dijon mustard, and olive oil until well combined. Season with salt and pepper to taste. Set aside.

      Assemble the Salad: In a large salad bowl, add the mixed greens as a base. Top with sliced apple, pear, roasted butternut squash, dried cranberries, toasted walnuts, and red onion.

        Dress the Salad: Drizzle the maple dressing over the salad. Gently toss everything together to ensure even distribution of the dressing.

          Finish and Serve: Sprinkle crumbled feta cheese on top. Serve immediately to enjoy the fresh flavors and textures.
