With fresh spinach, cherry tomatoes, and optional breakfast sausage or turkey bacon, it’s a tasty and satisfying meal. Ready in just 25 minutes, this recipe is perfect for brunch or a busy morning. Don’t forget the fresh basil on top for extra flavor!

Ingredients
  

4 whole wheat English muffins, split

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup cooked and crumbled breakfast sausage or turkey bacon (optional)

1/4 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil for drizzling

Fresh basil for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Arrange the split English muffins cut side up on the baking sheet. Drizzle a little olive oil over each half for extra flavor and crunch.

      In a mixing bowl, crack the eggs and whisk them together with salt, pepper, garlic powder, and oregano until well combined.

        Divide the chopped spinach evenly among the English muffin halves, then pour the egg mixture over the top, filling to almost the edge without spilling.

          Sprinkle the shredded mozzarella cheese evenly over the eggs, followed by the halved cherry tomatoes and crumbled sausage or bacon (if using).

            Place in the oven and bake for about 12-15 minutes, or until the eggs are set and the cheese is bubbly and golden.

              Once removed from the oven, let cool for a few minutes before garnishing with fresh basil, if desired.

                Slice and serve while warm for a delicious breakfast or brunch delight!
