6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh chives, finely chopped

1 tablespoon fresh dill, finely chopped

1 tablespoon lemon juice

Salt and pepper, to taste

4 slices of whole grain bread

Lettuce leaves (optional)

Sliced tomatoes (optional)

Boil the Eggs: Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for about 12 minutes.

    Cool the Eggs: After 12 minutes, transfer the eggs to an ice water bath to cool for about 5 minutes. This stops the cooking process and makes peeling easier.

      Prepare the Filling: Once cooled, peel the eggs under running water to help remove the shells easily. In a mixing bowl, roughly chop the eggs with a knife or fork.

        Mix Ingredients: Add the mayonnaise, Dijon mustard, chopped chives, chopped dill, lemon juice, salt, and pepper to the chopped eggs. Stir until combined and creamy. Taste and adjust seasoning as desired.
