Ingredients
  

1 pound ground chicken

2 tablespoons sesame oil

3 cups coleslaw mix (cabbage and carrots)

1 cup bell peppers, thinly sliced (any color)

3 green onions, sliced (whites and greens separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Sesame seeds, for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet or wok, heat the sesame oil over medium heat. Add the ground chicken and cook until browned and fully cooked, breaking it up with a spatula as it cooks, about 5-7 minutes.

    Add Vegetables: Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant. Then, add the coleslaw mix and bell peppers to the skillet. Stir well to combine and cook until the vegetables are just tender, about 4-5 minutes.

      Season the Mixture: Pour in the soy sauce, rice vinegar, hoisin sauce, and red pepper flakes (if using). Stir everything together, allowing the flavors to meld and the mixture to heat through, about 1-2 minutes. Taste and adjust the seasoning with salt and pepper as needed.

        Finish and Serve: Remove from heat and stir in the white parts of the green onions. For a nice finish, garnish with sesame seeds and the green parts of the green onions on top.
