12 oz penne pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, sliced

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the sliced chicken with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove chicken from skillet and set aside.

      Sauté the Aromatics: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

        Add Spinach and Cream: Add the fresh spinach to the skillet, stirring until wilted. Then pour in the heavy cream, stirring well to combine. Bring the mixture to a gentle simmer and let it bubble for about 2-3 minutes.

          Combine Everything: Return the cooked chicken to the skillet along with the drained pasta. Mix thoroughly, adding reserved pasta water a little at a time to reach your desired sauce consistency. Stir in the grated Parmesan cheese until melted and creamy.

            Season and Serve: Taste the pasta and adjust salt and pepper if necessary. Serve hot, garnished with fresh basil and additional Parmesan if desired.
