Ingredients

12 large pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Shells: Bring a large pot of salted water to a boil. Cook the pasta shells according to package instructions until al dente, about 9-11 minutes. Drain and set aside to cool slightly.

Prepare the Filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix until well combined.

Stuff the Shells: Carefully fill each pasta shell with a generous spoonful of the spinach and ricotta mixture.

Assemble the Dish: Spread half of the marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish, open side up. Pour the remaining marinara sauce over the shells.

Top with Cheese: Sprinkle the remaining 1/2 cup of mozzarella cheese over the stuffed shells.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Allow the shells to cool for a few minutes before serving. Garnish with fresh basil leaves.
