1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

1 cup cooked breakfast sausage, crumbled (or your choice of protein)

4 large eggs

1 cup shredded cheddar cheese

2 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Prepare the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, smoked paprika, and garlic powder. Cover and cook for about 10-15 minutes, stirring occasionally until the potatoes are tender and crispy on the edges.

    Sauté the Veggies: In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and bell peppers. Sauté for 5-7 minutes or until the veggies are soft and slightly caramelized.
