Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

1 lb chicken breast, cut into 1-inch cubes

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon ground ginger

1 tablespoon lime juice

1 tablespoon vegetable oil

1 teaspoon red pepper flakes (optional)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

1 tablespoon lime juice

2 tablespoons honey or maple syrup

1 teaspoon sriracha or chili paste (adjust to taste)

1/4 cup warm water (to thin the sauce)

Chopped peanuts and cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, ground ginger, lime juice, vegetable oil, and red pepper flakes. Add the chicken cubes to the marinade, tossing to coat well. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Peanut Sauce: In a separate bowl, mix together the peanut butter, soy sauce, lime juice, honey or maple syrup, and sriracha. Gradually stir in warm water until the sauce is smooth and reaches your desired consistency. Set aside.

      Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the grill and cook for about 4-5 minutes on each side or until the chicken is fully cooked and has nice grill marks. Ensure the internal temperature reaches 165°F (75°C).

          Serve: Once grilled, remove the skewers from the grill. Serve hot with the peanut sauce drizzled over or in a small bowl for dipping. Garnish with chopped peanuts and cilantro if desired.
