Easy Chipotle Ranch Grilled Chicken Burrito

Marinated chicken grilled to perfection, paired with white rice, black beans, corn, and fresh veggies, all wrapped in warm tortillas and drizzled with chipotle ranch dressing. 2 boneless, skinless chicken breasts

1 cup chipotle ranch dressing

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked white rice

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 cup lettuce, shredded

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts, ½ cup of chipotle ranch dressing, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper. Mix well to coat the chicken. Cover and let marinate in the refrigerator for at least 30 minutes (or overnight for deeper flavor).

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for 5 minutes before slicing it into strips.

      Warm the Tortillas: While the chicken rests, warm the flour tortillas on the grill for about 30 seconds on each side, or until they are soft and pliable.

        Assemble the Burritos: Start building the burritos by placing a generous spoonful of white rice at the center of each tortilla. Top with black beans, corn, grilled chicken strips, diced tomatoes, shredded lettuce, and cheddar cheese.

          Add Dressing: Drizzle a little more chipotle ranch dressing on top of each filled burrito to enhance flavor.

            Wrap It Up: Fold in the sides of the tortilla over the filling, then roll from the bottom up to form a tight burrito. Repeat for all tortillas.

              Serve: Cut the burritos in half, if desired, and plate. Garnish with fresh cilantro and serve with lime wedges on the side.
