Ingredients

2 cans (15 oz each) navy beans, drained and rinsed

1 cup ketchup

1/4 cup brown sugar

1/4 cup apple cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 pound bacon, chopped (optional)

1 onion, diced

1 tablespoon olive oil

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

Cook Bacon (Optional): In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and let drain on paper towels. Leave the drippings in the pan.

Sauté Onion: In the same skillet, add the olive oil and diced onions. Sauté for 5-7 minutes until the onions are soft and translucent.

Combine Ingredients: In a large mixing bowl, combine the drained beans, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, black pepper, garlic powder, and onion powder. Add in the sautéed onions and cooked bacon (if using), and mix well to combine.

Transfer to Baking Dish: Pour the mixture into a 2-quart baking dish, spreading it out evenly.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the sauce is bubbling and slightly thickened.

Serve: Allow to cool for a few minutes before serving. Enjoy your comforting baked beans!
