2 large cucumbers, sliced thinly

1/2 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar (or honey)

1 teaspoon grated fresh ginger

1 garlic clove, minced

2 tablespoons sesame seeds

1/4 cup chopped fresh cilantro

Pinch of red pepper flakes (optional for heat)

Instructions
 

Begin by preparing the cucumbers. If desired, you can use a mandoline for perfectly thin slices. Place the cucumber slices in a colander, sprinkle with a pinch of salt, and let them sit for about 15 minutes to draw out excess moisture. Pat them dry afterward.

    In a large bowl, combine the rice vinegar, soy sauce, sesame oil, sugar (or honey), grated ginger, minced garlic, and red pepper flakes (if using). Whisk the dressing together until the sugar is dissolved.

      Add the sliced cucumbers and red onion to the bowl with the dressing. Toss everything together gently until the cucumbers and onions are well coated with the dressing.

        Allow the salad to marinate in the refrigerator for at least 30 minutes, or longer if you prefer more flavor.

          Just before serving, sprinkle the salad with sesame seeds and chopped cilantro. Toss it lightly again and enjoy!
