Dutch Oven Pulled Chicken

4 boneless, skinless chicken thighs

1 cup chicken broth

1/2 cup pure maple syrup

1/4 cup apple cider vinegar

2 tablespoons olive oil

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon cayenne pepper (optional for heat)

1 sweet onion, sliced

4 whole wheat hamburger buns (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 300°F (150°C).

    Prepare the Chicken: Season the chicken thighs with smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Rub the spices into the meat evenly.

      Sauté the Onion: In a large Dutch oven, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.

        Sear the Chicken: Push the onions to the side and add the seasoned chicken thighs to the pot. Sear each side for 3-4 minutes until slightly browned.

          Add the Liquid Ingredients: Pour the chicken broth, maple syrup, and apple cider vinegar over the chicken. Stir to combine everything well.

            Cover and Bake: Cover the Dutch oven with a lid and place it in the preheated oven. Bake for 2 to 2.5 hours or until the chicken is tender and easily shredded with a fork.

              Shred the Chicken: Once cooked, remove the Dutch oven from the oven. Using two forks, shred the chicken right in the pot, mixing it with the cooking liquid.
