4 boneless, skinless chicken breasts

8 slices of ham (preferably smoked or honey)

8 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (Panko for extra crunch)

Salt and pepper to taste

½ cup Dijon mustard

¼ cup olive oil (for frying)

For the Creamy Swiss Cheese Sauce:

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1 cup grated Swiss cheese

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Preheat your oven to 375°F (190°C). Take each chicken breast and place it between two sheets of plastic wrap. Use a meat mallet to gently pound the chicken to even thickness, about ½ inch thick. Season both sides with salt and pepper.

    Assemble the Chicken Cordon Bleu: Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast. Roll them up tightly, starting from the thinner end, and secure with toothpicks or kitchen twine.

      Dredging Station: Set up a dredging station by placing the flour, beaten eggs, and breadcrumbs in separate shallow dishes. Dip each rolled chicken breast first in flour, then in beaten eggs, and finally coat it in breadcrumbs, ensuring it’s fully covered.

        Cooking: In a large skillet, heat olive oil over medium heat. Add the chicken rolls, seam side down, and cook for 3-4 minutes on each side, or until golden brown. Transfer the browned chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reads 165°F (75°C) internally.

          Make the Creamy Swiss Cheese Sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes, creating a roux. Slowly whisk in the milk, ensuring no lumps form. Cook for 4-5 minutes until the mixture thickens.

            Add Swiss Cheese: Reduce heat to low, and gradually stir in the grated Swiss cheese until melted and creamy. Season with garlic powder, salt, and pepper. Remove from heat.

              Serve: Remove the chicken from the oven and let it rest for a few minutes before slicing. Drizzle the creamy Swiss cheese sauce over each piece, and garnish with chopped parsley.
