3 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon almond extract (optional)

Food coloring (optional)

Powdered sugar, for dusting

Royal icing or colored icing (for decorating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy.

        Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) until thoroughly combined.

          Combine Mixtures: Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. If desired, divide the dough into portions and mix in food coloring until you reach your desired shades.

            Chill the Dough: Divide the dough into two or three disks, wrap them in plastic wrap, and refrigerate for at least 1 hour or until firm.

              Roll Out the Dough: On a lightly floured surface, roll out one disk of dough to about ¼ inch thickness. Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets, leaving some space between each cookie.

                Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers might look slightly underbaked, but they will firm up as they cool.

                  Cool: Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

                    Decorate: Once cooled, you can either dust them with powdered sugar or decorate with royal icing or colored icing as desired. Allow the icing to set before serving.
