2 lbs flank steak, cut into bite-sized cubes

4 medium russet potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1 cup sour cream

1/2 cup cooked bacon bits

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

Fresh chives or green onions, for garnish

Prep the Steak and Potatoes: In a large bowl, season the cubed flank steak with paprika, thyme, black pepper, and salt. Toss until evenly coated.

    Layer the Crockpot: Place the diced potatoes at the bottom of the crockpot. Add the chopped onion and minced garlic on top of the potatoes.

      Add the Steak: Layer the seasoned steak on top of the onion and garlic mixture.

        Pour Broth Over: Pour the beef broth evenly over the contents in the crockpot to allow all ingredients to soak up the flavors as they cook.

          Cook: Cover the crockpot with the lid and cook on low for 6 to 8 hours or on high for 4 to 5 hours until the steak and potatoes are tender.

            Finish with Cheese and Sour Cream: About 30 minutes before serving, stir in the sour cream and half of the shredded cheddar cheese. Allow it to warm through until the cheese melts.
