Crockpot Chicken Fajitas

2 lbs boneless, skinless chicken breast

1 large onion, sliced

2 bell peppers (any color), sliced

4 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies

2 tbsp olive oil

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp oregano

1/2 tsp salt (or to taste)

1/4 tsp black pepper

Juice of 1 lime

Fresh cilantro for garnish

Tortillas (for serving)

Optional toppings: sour cream, avocado, shredded cheese, jalapeƱos

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts in the bottom of the crockpot.

    Slice the Vegetables: Add the sliced onion and bell peppers on top of the chicken.

      Add Flavor: In a separate bowl, combine the minced garlic, diced tomatoes (with juice), olive oil, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir until well mixed.

        Combine: Pour this mixture over the chicken and vegetables in the crockpot.

          Cook: Cover the crockpot and set it on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and tender.

            Shred the Chicken: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and stir to combine with the vegetables and sauce.

              Finish with Lime: Squeeze the lime juice over the mixture and give it one final stir.

                Serve: Spoon the fajita mix onto warm tortillas, garnishing with fresh cilantro and any additional toppings you like.
