Crock Pot Cashew Chicken

1.5 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)

1 bell pepper (sliced, any color)

1 cup broccoli florets

1 cup cashew nuts (roasted and unsalted)

4 cloves garlic (minced)

1 inch fresh ginger (grated)

1/2 cup soy sauce (low sodium)

1/4 cup honey

1/4 cup chicken broth

2 tablespoons rice vinegar

1 tablespoon cornstarch

1 tablespoon sesame oil

2 green onions (sliced, for garnish)

Cooked rice (for serving)

Instructions
 

In a large bowl, combine the soy sauce, honey, chicken broth, rice vinegar, garlic, ginger, and sesame oil. Mix well until the honey is dissolved.

    Place the chicken pieces in the crock pot and pour the sauce mixture over the chicken, ensuring all pieces are well-coated.

      Add the sliced bell pepper and broccoli florets to the crock pot. Stir gently to combine, so the vegetables are sprinkled throughout the sauce.

        Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.

          About 30 minutes before serving, stir in the cashew nuts. If the sauce needs thickening, mix the cornstarch with 2 tablespoons of cold water in a small bowl, then stir it into the crock pot. Cook an additional 30 minutes.

            Once ready, taste the sauce and adjust seasoning as needed. Serve over cooked rice and garnish with sliced green onions.
