Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup crumbled feta cheese

1/4 cup honey

1 tablespoon hot sauce (adjust for spice level)

2 tablespoons olive oil

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken: Season the chicken breasts with salt and pepper. If they are thick, you may wish to pound them to an even thickness for more even cooking.

Set Up Breading Station: In three separate shallow dishes, place the flour in one, whisk the eggs in another, and combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in the third.

Bread the Chicken: Dredge each chicken breast in flour, then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in the panko mixture, pressing gently to ensure the breadcrumbs adhere.

Cook the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the coated chicken breasts and cook until golden brown, about 3-4 minutes on each side. This will give them a crispy crust.

Prepare the Hot Honey Feta: While the chicken is cooking, in a small bowl, mix the honey and hot sauce together. Set aside.

Bake the Chicken: Once the chicken is golden, drizzle some of the hot honey mixture over each piece, then sprinkle the crumbled feta cheese on top. Transfer the skillet to the preheated oven.

Bake to Perfection: Bake for 15-20 minutes, or until the chicken is cooked through and the feta is slightly melted and golden.

Serve: Remove from the oven, drizzle with any remaining hot honey, and garnish with chopped parsley if desired. Serve hot with your choice of sides, such as roasted vegetables or a fresh salad.
